Root LTEVO have s-off but cannot flash anything

Seriously awesome point by point addressing of all my concerns! Much appreciated!

I actually used Fresh on my old LTEVO about a year ago. insurance sent me a new one when it broke and I just never bothered to root it until now.

My big concern was not being able to flash stuff from the command line, ie, "fastboot flash zip rom.zip" but if I can just do it from recovery then its not really a big deal.

As for the particular rom in question, here is the link from the list you provided me:
[ROM] 09/06/12 | Fresh Evo LTE 5.3.1 | 2.13.651.1 | New OTA & Bug Fixes | Read More - xda-developers
http://forum.xda-developers.com/showthread.php?t=1696645

and on that forum page, here is the link it provides, which is dead AFAIK:
http://geekfor.me/lte/403/fresh-evo-lte-531

and I see from that list that it is listed under ICS, not jellybean, perhaps thats why my phone balked at it to begin with. Since I have a jellybean phone, do I only have the option of using a jellybean rom? Sorry if thats a n00bish question!

ok i was thinking it was the fresh rom, but was not sure. so roms are basically software. they have nothing to do with hardware. software can be upgraded or downgraded depending on what you want. so if you wanted to you can flash ics or jb, you should be fine for the most part. the only issue you will have is if you have the current radios. which you do not. you are on the second to the latest ota firmware.

with the latest firmware came a new touch panel. now the firmware that we can use to upgrade the phone has the touch panel removed because it limited users to certain roms. with the new tp you can only flash any new jb roms like meanbean or viper. but the good captain throwback has removed the tp from the firmware he offers so that you should have no issues with flashing any kind of rom.....like aosp roms which i am a big fan of.

now i noticed that since you are not completely current with firmware, i would recommend that you update them first before you start flashing roms like meanbean or viper as it is recommended that you have the latest firmware.

here is a guide for you about firmware:

not sure with your phone being in a weird state, if it will work or not. but follow the s-off method in the guide.
