You can if you'd like, but if whoever you sell it to wants all of those things, that will be a bonus to them. If they don't want it, they won't ever know anyway. If you want to return it to stock, just run the RUU and sell it that way.
Let me know if you still want to make the phone S-ON, but it's really not necessary to do that.
Go here and download this zip: lock_bootloader.zip
Put it on your sd card and flash it through recovery.
Run the RUU when it's finished downloading. That will return you to stock.
Then to s-on use fastboot command: fastboot oem writesecureflag 3
I'd say there is absolutely no reason to turn s-on again though... Nobody will know a difference and anyone who cares will be so glad to be s-off already and not have to do the wire trick.
