Root Need some help

I am not sure where to put this, and to my luck my question might have been answered in a previous thread. A little back ground. I have so far rooted 3 phones. A Motorola Droid 3, A Motorola Droid X2, and now a Samsung 4g Epic touch with a Gingerbread build of GINGERBREAD.EL29. When I first rooted my Droid 3 I started to freeze programs. I didn't want to remove them do to OTA updates. I wanted to be able to go back to stock if needed. I didn't freeze many apps; most of them where just the Verzion apps. Then bloatware I was never going to use. I bricked my phone doing so. I had rooted my phone with Pete's root tools, and that had an option to install the original hardware. To my l lack of knowledge on how the to make the file system so that the Root tool could find, and install. I had to turn back in my phone. I played dumb. The root was gone I uninstalled it. That's how I got the X2. I rooted that just to have bragging rights that my phone was rooted. So now to my question(s). One: What is the benefit of rooting? Two: I been seeing a lot about custom roms. How do I install a custom rom?, and if I choose to install a custom rom how do I revert back? What is a good custom rom to install? What about the partition that the new phones are doing? I have 11.5 GB of internal memory, but only allowed 1.9 GB of that for apps. Does the custom roms Delete this partition? I know what I am trying to do avoids my warranty. I know that there is a risk of completely bricking my phone. That is why I am coming here. To find that the with the experience, and know how of not bricking. Thanks to those that help in advance!

Cant say for sure on your phone as I have an evo however you may want to check out the droid X2 forums over here. They can answer all your questions and get you on the right track. Ill see if a mod or guide will move your thread over there.

There are several things I do with root. Block ads, tether, custom ROM, backup apps and data, and some apps need root for increased functionality.

As far as custom ROMs go, my personal preference is CyanogenMod (CM). It is based on stock Android so no bloatware and has some nice useful tweaks. I am currently running CM9 which is based on Android 4.0. I am on a nightly build (experimental), but it is very stable and smooth IMO.

If you are interested in anything I listed just ask and I can provide links.
