I feel like a child in a candystore in google play! But i am quickly realizing that i need to learn about organizing things. What are the right terms to use to describe the android desktop so that i can google my questions?

well its usually referred to as the "homescreen panels", or just "homescreen/s". The button/area where the apps are found is the "app drawer". The set of icons at the bottom of the homescreen which traditionally holds the app drawer, phone, contacts and messages shortcuts is the "dock".

Theres also Widgets... the way id describe widgets is that theyre more than just a shortcut to open an app.. theyre "alive" lol. They can work as a live animated indicator to show things like time, weather, etc or used as toggles to instantly change something without visibly opening an app

Thing at the top with time, icons etc in it is the Status Bar. Pull that down and you get the Notification bar/area/shade, people call it different things but always Notification something :)

Home Screens & then you have Launchers, which you can customize. Such as Go Launcher Ex, Holo Launcher, ADW Launcher, just to name a few. I use Holo on my phone and Nova Launcher Prime on my tablet.

To expands on the above the launcher app provides homescreens & your app drawer. Essentially it ifs your interface for launching other apps but also where you place widgets.
