Root Newbie root questions

I have read through many articles on rooting, still a bit worried about doing it though, don't want to mess up phone.
I want to only root my LG Optimus V just so I can move apps to sd ( such as Dishnetwork app) and delete preinstalled bloatware, and I do not install a different rom. If I did a factory reset after rooting, and without changing rom would I brick phone? Also what method is easiest, safest, and can unroot just as easily and safely?

Your best bet would be Gingerbreak, and no you wouldn't brick it by doing a factory reset. That only happens with the 1% battery mod, which you don't have.
 
After rooting you will no longer be able to use the factory reset found in the privacy menu. You will only be able to use the "wipe data/factory reset" option in the custom recovery you need to install right after rooting.
This is very important or you could brick your phone and or mess it up with no way to fix it.
Time and time again there are new members that had rooted and for whatever reason decided to do a factory reset of there phones from the privacy menu. They usually end up permanently bricked because they didn't install a custom recovery.
With a custom recovery installed you can fix any mistake you make once you make a backup of your system in the recovery(this is called a nandroid backup)
The trick is to install the right recovery for A.The screen that you have(most OS version 2.2.2 phones have the Hitachi screens), B.The ROM you want to install(as recommended by the dev of the ROM). I know you said you don't want to install a ROM right now, but the best all around recovery to use for the Hitachi screen and drivers is a modified CWMod recovery by BobZohme and can be found here https://github.com/inferiorhumanorgans/android_device_lge_thunderc/wiki/Binary look right under the list of ROM'S for the "v" for the download link.
 
Just want to weigh in here as someone who rooted successfully but had the wrong recovery and gave myself (and helpers here, LOL) a major headache in "soft-bricking" my phone (is that the right term?) when going to put on a ROM.

It's a great guide, and a great method.

I originally had no intention of flashing a custom ROM, I just wanted to root so I could use Link2sd and get more space for apps. I was very happy with the root and the Link2sd and loved the new functionality. BUT, my phone has horrid battery life, and I wanted adobe flash, so decided to flash a custom ROM. That's when my trouble began b/c of my recovery being incompatible with my screen (I had no idea of that issue).

The only thing you need to double check, like Andy said, is your OV screen. I have a 2.2.2 with hitachi screen. If you have a 2.2.2, you probably have the new Hitachi screen, too. So, the older xionia recovery wouldn't be for you. There are other good options available, and I like the one I chose, which can be found in the github link Andy gave you above...

Thanks for all the info. Will not be rooting after. I tried the apps to sd without root technique that I saw in the "[Guide] Move more (most) apps to SD without root (Simplified)". Worked like a charm. went from 21 to 58 meg memory. These forums and the people in them a great. I have learned a lot through your knowledge and help.

Just as an idea I've used link2sd have 175 apps with 85mb free space.
