Would the WiFi version not install instead of the LTE
I got my 32gb 4g one very cheap I don't bother with a Sim card only WiFi use

So in theory could I wipe the device and install a WiFi only version from the factory images page

No it won't work. It won't even boot. It's not compatible, don't do it.

Had to unlock/flash 1 of 3 of the 7's in the household to 4.4.4 as 5.0.1 was boot looping. The only way to stop it was to flash. Not a big deal, runs aps just the same for my 9 year old.
