So I port a number to GV and set my VM cell to handle it (forward to VM).
If your VM voicemail is not disabled, I gather the calls forwarded to a VM number go to the VM voicemail not the GV voicemail when not answered and probably the GV voicemail if the VM phone is off or no service. What if another, say, verizon cell is also a forwarding number to the GV call?
I gather the hassle is calls end up in both the GV and VM voicemails. I can live with that with some displeasure.
How does caller ID work? Or does it? i.e. I'd see the incoming caller ID on my VM phone?
The number in question is a contact for my sexual assault advocacy and each call is quite sincerely very important to me. I hesitate to just try it without some predictability though those features would be very useful.
If your calls are that important then VM is not a good choice of carriers for you, the service drops and is out for days at a time. You may want to rethink your choice of carriers

I remember someone saying it would not work with VM, I just added my Triumph to the GV list and called myself. Worked fine.
