After writing this thread I sat down with Link2SD and wrote a tutorial for it. It is in the All Things Root sticky. What is eating all of your memory is your dalvik-cache. I suggest removing unused or little used apps.

Before I rooted my phone I had 17-20megs of internal memory available. I rooted and moved 15-25megs of programs from the internal to SD card.
Before I moved any program I did a force stop, cleared my cache and deleted data. Once that was done I moved them all over. I figured once it was all done I'd have 40 megs or so available... Wrong, I had 26 megs. So I did a reboot, hoping there were some errant files that would get cleaned on the boot... Now I have 15 megs available.
I uninstalled the Google map updates which brought me back up to 26 megs. What am I doing wrong? How can I clear the memory so I don't have to delete text messages every time I get a new one?
