CF-Root installs a compatible version of the ClockworkMod recovery which allows nandroid backups. As for d/l mode, you sure you're pressing HOME+POWER+VOL_DN and not VOL_UP?

If, for some reason, you do end up in the position where you cannot get into download mode (it is possible) one of these little chaps Samsung Galaxy S/ S2 unbrick USB Jig Download mode | eBay UK will get you going again. All you need to do is plug it into the bottom of the phone and turn it on.
