Your system/data/cache gets backed up. Anytime you make a major change to your phone you make a backup. That way if something happens you can go right back to how your phone was before you made the change instead of going back to the original backup you made while stock. It doesn't hurt to make several backups. Saves you the headache of reinstalling certain things that you might have had before you changed something.

I would label my backups in a format that I could understand when it came time to flash them. Example 12.9.12.#2ROM.JBtheme I know that I made this backup on the 9th and I had the #2 ROM installed with the JB theme. If you do this make sure you DONT put any spaces in the name. Use periods instead of spaces. It will error out when you try to flash it.

So everything i have on my phone will be backed up and when i flash over to a new ROM will i have to add my contacts and apps and stuff or will it go directly back on there ?

You can flash a Rom w/o wiping and your data may stay intact. All devs strongly recommend that you wipe data before flashing roms else you may get stuck in boot loops and other nasty stuff, only when flashing a new version of the same Rom you may not need to wipe data. I'm starting to sound like d0ver already, if it's the first time your flashing, do a backup, wipe data before you flash, flash the new Rom, then you can restore your data off the back up you made.

Your contacts are synced to your gmail so you just have to sync once you get the phone situated.
