I don't own a Droid X (not yet) but on the original Droid I have cut down red eye by partially pushing the shutter button to light the LED for focusing (constricting the subject's pupils - ask them to look at the light) and then push all the way to take the picture (I am guessing the X works in a similar fashion). That has helped. Other than that, there are tons of PC photo editing programs to remove red eye after the fact.
An app that is good for editing photos on your phone is available in the market called PicSay Pro. It costs a few bucks but does do a great job and has some other nice bells and whistles.
