Root regarding kernels

Just trying to wrap my brain around kernels and all they do...

What are the major differences between each kernel (freedom (a,m,l), anthrax, etc). Do each of their frequency ranges vary that much? I just feel like it is too "simple". Am I missing something?

The difference between the freedom series are the amount they undervolt the phone. Theoretically more undervolting=better battery life but not all phones can handle aggressive hence the other ones.

Different kernels handle things differently. Anthrax is the best performance wise but doesn't have quite as good of battery life as Freedom. AnthraX will also improve music you listen to.

also keep in mind that what work for you may not work for me. there are juts to many variables when it comes to kernels to have the perform exactly the same. also give a kernel a few days so that it has time to settle in before moving to the next one.

Quick follow up question. What constitites an under clock. I see a lot of people with settings from 245-1113...would under clock be like 245-7xx? And dependi.g on the kernel and phone if it will work?

your minimum setting would be your underclock and your max would be your overclock. and yes it will vary from phone to phone. mine does fine at 1190, but some can't overclock that high. also make sure that you have set on boot unchecked until you know your phone is stable. once you know that it is stable then you can check it.
