Its always good to freeze first, go a day to make sure your phone is ok n working like before the freeze. then when you r sure everything is stable you can uninstall. Titanium bckup is the app to use. Kevins post show the apps that you can safely remove. make a nandroid r back the apps you uninstall with Tit Bckup first incase you need to get them back
 
I just done a titan backup on everything. how do I make a nandroid? saw the link for nanadriod but its saying CWM and im on stock root , dont want to mess with other roms/kernel(like i said super noob still dont know the diff)first root was prevail, could do that thing in my sleep :)
and is there a list of replacements I like to read on my phone.also without a nanadroid will a simple odin to stock then back to root work, yeah i know its a lot of time (downloads redoing setting ) but i like to do thing many times so i can do it faster

You do a nandroid by booting into recovery then hitting backup... Let it finish then reboot

Use the volume rocker to go up and down and the power button to select

Would the Samsung Account/Link apps and all of the Samsung backup things still be necessary? I can't really honestly imagine that they are completely required but at the same time, I don't feel like bricking my only current phone or etc. Same with the default email app, Google Text-to-Speech, Hangouts, and Talkback.
