Root Replacement Phone had GB Installed, SBF Back?

Hey, I just had a quick question for my slight perdicament. I just got a replacement phone from Verizon mailed to me today. I was under the impression that it would have 2.2 installed so I could get CM7 back up and running. However, it had the OTA 2.3 Update right out of the box. I'm worried that because it's the OTA I won't be able to SBF back to 2.2/.1 without bricking it.

Can I SBF back from the OTA Update?
