Does anyone have a comprehensive list of the stock apk's and what they are for? I wanna delete as much as possible.

read the dummies guide in the after rooting section under bloatware. it is for froyo so not sure how much will pertain to gingerbread. just be careful on what you delete. i would get titanium backup and just freeze the apps.

i do have a question is there any way to get the stock voicemail app while using the MIUI rom if so can you post a link pls??

If you have adb, you can try this....

adb shell
cd /system/app
ls

this will give you a list of all the files located in /system/app on your phone. That should be all your apps. Tried in in CM7 and its working for me.

And I'm not 100% on this, but for me this is looking (so far) to only be apps that the Rom came with... so that could help you.
