yes two ways
1.right after you root and before you install anything or change anything create a backup through bootstrap or rom manager that way whwn you wat to go back to stock you just restore that backup and unroot
2.sbf whatever version you need to be on and it will return everything back to stock(generally only used by those of who are bricked or didnt do what i proposed in my first suggestion)

yes this will allow you to get updates ...only times you cant get updates is if you are on a leak,remove system apps ,or running a rom or such that would block the update and all of these are reversable easily with suggestion #1 i posted to your question
