Generally it's a bad idea to update while rooted because sometimes the updates remove the "rooting" and plug holes that were exploited. As far as the "How", it can be done the normal way on most devices, I don't see why not on the Note2

Flash a rom and custum recovery, I use XquiziT from xda. Updates alot fast. Also use the perseous kernel
