Can someone please explain the advantage to rooting your android phone other than getting rid of the preloaded apps?

Welcome Shotgunschoppe! Rooting not only gives you the ability to remove bloatware, it allows you to load custom ROMs and kernels, enables wireless tether, and is just plain fun along with other benefits I am probably forgetting in my sleep deprived stupor. Be sure to check out the "All Things Root" forum specific to your device to get all the information you need to make an educated decision.

Welcome, and good decision.
The first root app I recommend you install is AdFree - get rid of ads in all of your apps.
After that there are a lot more options once you start playing around with ROMs, overclock, etc. And get a good backup app like Titanium Backup (also it is a great app to freeze bloatware in case you delete something by mistake while you are learning)
