Root Want to Uninstall Stock Apps

Hey Everyone.

I am fairly new to the whole rooting thing. But I think I can understand most things. Basically atm I am on CM 7.1. I realised one day that almost most the apps I use are third party apps instead of the 'stock' CM apps and thought I might as well uninstall them. So I would like to uninstall the following apps via TB and I need to know if it is 'safe' to do so (In brackets I have the alternative that I use):

[DESKTOP] ADW.Launcher (GO Launcher/LauncherPro)
Android keyboard (SwiftKey)
[BOOKMARKS] Browser (Dolphin Brower HD)
Calculator (CubeCalc)
[VOICEMAIL] Dialler (TouchPal Dialler)
Email (Gmail)
Home screen tips (Cause its useless)
Messaging (Go SMS Pro)
Torch (Flashlight HD or somthing)

So please lmk which of these I can uninstall and which of these I need ot keep. Also bare in mind that I like to backup my call logs/text messages etc, and then restore them if I have want to switch roms.

I'd just leave them alone tbh, they're taking up minimal space and a lot of replacement apps are just overlays for stock apps so uninstalling the stock app would break basic functionality of the phone. 2 which immediately leap out at me are Messaging and the Dialer. Go SMS just skins (for want of a better term) the standard SMS app so uninstalling the stock app would stop you from sending/receiving SMS.
