Don't have a screen to share just yet but was hoping for some information. I know there are some Fancy Widget skins for the clock and weather that are similar to HTC Sense ones.

Can anyone tell me which FW skins I need to install?

I believe the clock skin you're looking for is the H7C Clock and the weather skin is H7C Weather.
 
Here is my main home screen. I'll answer the question now that I know will be asked, the orange bar at the bottom is a replacement for having to use the hard buttons (menu, home back).

This is my current setup. It's Cyanogen Mod 7 running on my HTC Thunderbolt...but you guys can make yours look just like it, so I figured I would post it here too! :P

simi clock widget
beautiful widgets 1x1 weather
minimilastic text for battery:%
simi folder with my own creation icons...simple and quick
my own creation phone and web buttons (i know web is off center)
widget locker with XII white slider and missed SMS count widget for calls/sms/gmail

How do you get these different setups?

Photoshop is a huge help in customizing your screens. It's mostly just paying attention to what's out there, grabbing what turns you on, and finding a wallpaper that will allow everything to blend in.

Minimalistic text and Font Changer are apps that I'm very fond of. They allow you to add text anywhere you care to.

EDIT: I updated the screen to better show battery and weather status.
