what is s-off / s-on?

To expand on what loyal said, S-OFF stands for security off, which allows you to access root files and directories of your phone that "aren't supposed to be accessible"
S-ON is locked and doesn't allow these files to be viewed/manipulated
 
Where in the phone does it show s-on/s-off?

Just curious because I haven't received my thunderbolt yet, but want to know for reference.
