Saturday I smoked up some pork for a late 4th of July party. Pulled pork, a rack of baby back ribs, and a package of country style spareribs. Last night I ate the last of the ribs and a pulled pork sandwich. Tonight I'm taking the last of the pulled pork and simmering it in some pinto beans and hot sauce seasoned with a chili seasoning. I'll roll that up in tortillas with some shredded cheese for dinner.
My pulled pork burritos were spot on. I have some saved pulled pork vac sealed in the freezer. I know for certain what it will become at some point in the future.
Tonight we are having the last of our deli meat made into subs. The wife made a cucumber salad we'll have with our subs.
