Tonight was home made burrito night at the Ob ranch. Pound of ground beef browned with some drained extra hot Rotel and Williams Chili seasoning, a can of Old El Paso refried beans zapped in the microwave, sour cream, shredded cheddar, and tortillas. One.. two... three.... snip snap.

I made a homemade seafood chowder. Basic New England chowder broth with cod, clams, crab, scallops, and shrimp. 5 pints of leftovers too.;)

We had green asparagus Kaat. I have never tried the white though it's common enough in the market. It grows well around here.. I've often considered growing some because it's so yummy. I normally grill out asparagus. I wrap them up in foil with some olive oil and butter and sometimes add some Parmesan cheese. I just let it steam while I'm grilling. The wife fixed last night's dinner. She simply sauteed the asparagus in the same mix of butter and olive oil.
Adding a bit of fresh garlic is a nice twist but we seldom prepare it that way. I don't think you can mess up asparagus. Eating is just a matter of cutting up a fork full and stuffing it in my face. :)

Green eh? You can cook then as they are, right? The white one have a tough peel, you need to cut them. Can't wait until April for regional harvest.

You purchase them in bunches around a pound or the same amount found in a can. You simply wash them and snap off the big end and cook. Very little hassle. Are the white ones worth the extra effort?

Pork tenderloin with a crispy salad with cucumber, cherry tomatoes, sweet pepper, mozzarella cheese, bacon and ranch dressing.

Tonight, I cooked homemade again; 4 chicken breasts, cooked in a three-cup mixture of water, chicken bouillon and spices (garlic, adobo seasoning, onion powder; pepper with a mixture of basil, rosemary, oregano, and a touch of tarragon).

Fresh baby carrots, onions, celery, and broccoli florets (the florets were added last) joined the rest... I pre-soaked two cups of jasmine rice (after bringing it to a boil, heat is turned down to low-to-low-mid and simmered 14 minutes).

My wife-to-be loves my cooking. I hope that you do, too (the only thing that ground my gears was a small thumb-burn).

Super-simple, and super nice. LW

We went out to a local Pizza joint. My wife had what looked like the best stuffed shells dinner I've ever seen. I had a pepperoni pizza.:o

Ya can't go wrong with a good pizza or a deep-fried calzone.

Provided that it didn't come from a corporate entity that makes program pies, et cetera - like D's, or PJ's, or PH... you know the places I'm referring to.

If I'm going to eat Italian, they'd better not offer cheeseburger pizzas... LW

I made tomato soup with mini meat balls.
