What's for dinner ?

Cajun beans and rice. It's a cheap meal and tasty. Two packages of Knorr Cajun beans and rice and a Hillshire Farm beef sausage log. I cut up the sausage into chunks and blacken them. Then I add the water and rice mixture and cook per instructions. I add additional Cajun seasoning and Velveeta cheese and blend and serve. Feeding two the total cost is around five bucks. I'd like to try the dish with Cajun Style Andouille Smoked Sausage but my market doesn't carry it. I recommend Hillshire Farm sausages vs Farmland. Grease factor and casing being chewy rules out Farmland. Any sausage will work however. I've even made the dish with ground beef or breakfast sausage but it's not nearly as good in my opinion.
 
I'm doing homemade chicken strip and fries dinner in the air fryer. I just have to decide on which honey mustard recipe to make with it.
 
I'm baking a spiral cut ham section today. It's a quarter section of a shank that was spiral cut.
I'm pressure cooking some Navy peas to go with it. Not a fav of the wife but I grew up on ham and beans and just have to have it sometimes.
 
My wife got a new wok, so she's making beef and broccoli. As a bonus, the lid for the wok fits my 12" cast iron pan, so now I can cook even more stuff in that pan. :D
 
Fresh caught Atlantic cod. I'm baking one fillet for that is by far the wife's choice and I'm frying the other fillet. I'll cut it into portions, bread with seasoned flour and panko crumbs, and fry, The way I like cod. :)

My mother in law was talking about fish & chips in the air fryer this weekend, so I was thinking of this myself.

I tried air frying some cod portions and they turned out okay. I used a seasoned batter of flour and panko crumbs. I'm doing basically the same cook on the stove to compare the end product.

Speaking of air frying, we are big fans of sweet potato fries. You can pan fry them but the trick is to soak the cut fries in ice water before frying or they turn to mush and fall apart before crisping.
We've taken to buying frozen sweet potato fries and baking since they are available now. I spotted a recipe for air frying fresh cut sweet potato fries in the air fryer book. I've got to give that a try. I'm excited!
 
I wound up making Cubano panines.
