It was brought to my attention that I always default to steak. I blame that on the lack of 2 packs of bone-in porkchops lately. Family packs should not be part of a bachelor's diet. You end up wasting too much meat.

Go to the meat counter and only get what you need.
 
You might want to invest in a foodvac of some sort. Even with two mouths to feed, bundled packages or buying ahead when meat is on sale saves money. We cycle through what we freeze in a somewhat timely fashion but have experienced zero degradation of the meat that we vac sealed and froze for the future. I should have invested sooner.
 
I made a meatloaf tonight. I mixed the meat with some cracker, egg, and a third of a jar or hot salsa. Garlic salt and coarse ground pepper for seasoning and a tomato sauce glaze. We had mashed potatoes and some creamed cucumber slices as sides.
 
Catfish fry at the Olbriar ranch tonight. It was farm raised catfish but they turned out great. I went back to my age old, tried and true, breading for the fillets. I cut the fillets into strips and dipped them in a thin pancake batter that was seasoned with salt, pepper, and old bay seasoning. I then rolled them in panko crumbs and pan fried them. My wife had a side with her fish. I had fish. Yes, I love fish that much and it was that good!
 
Fried pork cutlets and a big pot of fresh green beans and new potatoes. Naturally some onion and some pulled pork saved for the dish were cooked with the beans as well.
 
I'm not sure this is legal in all 50 states, but it is in Rhode Island. A 10oz burger topped with cheese, bacon, and a fried egg between two grilled cheese sammiches.
