What's for dinner ?

After mowing all day, I cracked open a 12 pack for the sider / painter crew after they got done with my house and shed. I worked around those guys for years... we worked for the same builder. Anyway... time got away so dinner ended up being grilled burgers. I forgot how handy it is to crank up a grill and do burgers in a hurry.
 
I had some left over pork butt from last weekend that needed consumed. I took some of the chunks and tossed them in a skillet with some onions and peppers brazing the meat and caramelizing the onions . I then took the more finely shredded pork and added it to some pinto beans, chili seasoning and hot salsa and let it simmer into a thick chili. I rolled the pork chunks in tortillas with some cheese and sour cream and then topped them with my chili with some additional shredded cheese. Pork butt burritos deluxe.
 
Last night I grilled out some boneless skinless chicken thighs. I took the left over thighs and turned them into a chicken salad for tonight's dinner. Pretty good for leftovers. :)
 
Cheezits? in meatloaf? my dad used to make burgers with Ritz crackers never heard of using Cheezits before.....interesting.
I often use saltine crackers vs bread crumbs. The Cheezits idea spawned from the powdered white cheddar cheese they use. I wanted that flavor in my loaf. It's sort of a white cheddar salisbury steak like meat loaf. :) Honestly, it's pretty good but a bit rich.

What do you use for crust? Home made or purchased? Your pizzas look delicious!!!!

Normally we make our own, which is very simple, you just need time (we skip flavoring in the crust so we don't have to pair crusts with toppings).

For this cook we didn't have time, so we bought fresh dough from the grocery store, which is nearly as good. Often you can find dough in the freezer section that you thaw and let rise. I'm still not skilled enough to spread the dough out by hand, so I flour my counter top and my roller and spread it that way. :eek:

Your pies looked so good that I've got to try making some. It was a often meal when my children were growing up. At that time I was purchasing Chef Boyardee pizza kits in the box. I haven't seen them in years however. I've never made scratch crust or tried the frozen. Your pies have me yearning for home made pizza. I think I'm running to the market to explore my options in a bit. I'm craving home made pizza now... thank you very much. :)

Grab some corn meal to sprinkle in the pans to keep the crust from sticking. They will slide out no problem.

I couldn't find a box mix or frozen crusts so I purchased a premade crust you roll out into a pan and bake. It's like one huge biscuit and was in the same counter as such. :)
We shall see if I have wasted my money tonight!
 
My pizzas were just okay. A better tasting crust and perhaps a bit thinner would have been more to my liking. I left myself room to improve. :) It was still a fun cook and my pies were great for something different.
