What's for dinner ?

Football is on tonight, so I want something that is easy to eat when people are hungry and will hold throughout the games. One pan is in the oven and the second pan will go in once those are done. I'll put them in a crock pot with sauce. Put out some rolls and provolone cheese and folks can help themselves when they get hungry.
AND LEAVE ME ALONE TO WATCH THE GAME!!!!!!!!!!

We've had sub zero temps the last few days following my blizzard brisket cook. Tonight it took the leftovers and tossed them in a cast iron skillet with some BBQ. Some quick sandwiches for dinner.

I fixed chicken fajitas tonight. I diced up two chicken breast, coated them with avocado oil, seasoned them with fajita seasoning, then brazed them in a skillet. I then added my peppers, onions, and fajita sauce and simmered until my pepper chunks were tinder. Served with fresh tortillas and shredded cheddar. I ate too much!
 
I baked some fresh caught salmon tonight. Rubbed with butter and seasoned with coarse salt, pepper, and some paprika. No lemon or brown sugar. Just tasty salmon.
 
I boiled up and diced some chicken thighs and eggs. I diced up some celery and sweet pickles. Stirred it all together with some mayo and had me some chicken salad sandwiches.
 
Simple and easy. Ground beef, egg, wheat bread crumbs, garlic and jalapeno salt, and coarse ground pepper mixed and pressed into patties. Grilled to medium doneness. My go to hamburger steaks.
Served with some frozen sweet potato fries.
 
Leftovers. :) I smoked a ham at the cabin for guests yesterday. Naturally it was a lot more ham than needed. Tonight I'm having ham and baked sweet potatoes again. Tomorrow I will make ham salad out of the ham I didn't freeze. In the freezer I have a large meal of ham for the future as well as the shank bone that will be ham and beans sometime.
 
We are having a night out at my favorite Mexican restaurant. This is a third generation family restaurant that I've been a patron of for over fifty years. The business is now ran by the brother and sister that waited on us and who bussed the tables years ago. Excellent food at a decent price is part of the calling. Knowing the owners who still work at their craft and take pride in serving their customers well speaks volumes for the establishment.
