What's for dinner ?

Tonight I made taco salad. Shredded lettuce, red kidney beans, diced tomatoes, taco seasoned browned ground beef, diced onion, shredded mild cheddar, and crunched up nacho cheese flavored doritos. I had some hot salsa on my salad for dressing. The wife had ranch dressing.
 
Finally had Schlotzsky the other night. I love their sandwiches :D:thumbsupdroid:

Bar B Q chicken via the Air fryer. At least once, maybe twice a week I Like cooking a decent meal on the truck.

I had my fish and chips last night. I like to cut my fish into fingers, dip them in a thin seasoned pancake batter, and then roll them in panko crumbs and fry. I fried far more fish then we could eat. Tonight I heated my leftover fish fingers in the oven and then made fish burgers of them with some cheese and tartar sauce.
 
One of my favorite easy go to meals is Cajun red beans and rice. I, for countless years, have used Knorr brand packaged red beans and rice for my starter. A buck a package is hard to beat. I slice up a beef sausage log and brown it then add the water for the rice mixture, cook as per instructions and then add additional Cajun spice and slices of Velveeta cheese. It's easy, it's cheap, cooks in one pot, and it is very good. Much to my dismay, Knorr ceased selling the rice and bean starter. Forced to come up with a new plan, I bought Knorr brand chicken seasoned rice. I did my sausage trick and then added a can of red kidney beans and the water for the rice mixture and boiled for ten minutes to complete the cooking of the beans. I then added the rice mixture and my own Cajun spices and viola! It's not the same but close enough. It took an additional ten minutes to cook but still was a one pot tasty meal.

Tonight I'm grilling burgers served on butter toasted buns and french fries.
 
Tonight I'm having who knows what. We are attending my wife's 50th high school reunion. A catered dinner is part of the itinerary. I'm sure it will be something special.. not. :) My experience has been the wimpy tossed salad at a catered occasion is the highlight of meal. Maybe I'll be pleasantly surprised.
 
I smoked a brisket point Sunday. We ate two meals of brisket, fresh green beans, and new potatoes. Tonight I diced up the remaining brisket, added some noodles, mushrooms, sour cream, and beef broth. Beef n Noodles was mighty good.
 
I'm grilling out some boneless skinless chicken thighs tonight.

After an afternoon to think about it.... The grilled chicken will be chunked up and added to refried beans, shredded ice burg, shredded cheddar, and hot sauce for some grilled chicken soft tacos. Sour cream for the Mrs.
