What's for dinner ?

My son is making grilled chicken Caesar's salads. He made the dressing from scratch (and it tastes delicious) hand grating the fresh parmesan and whatnot and is tossing the chicken in the cast iron skillet. It's pretty cool having a kid in culinary school. :D
 
Store made Chicken Tamales from Tony's Fresh Market, They are outstanding, loaded with chicken.

My youngest children were in their early teens the last time I made our state fair. I spent most of the afternoon in the beer garden eating outstanding fish tacos and drinking cold beers with a couple of old high school buds I ran into. My kind of fair. :)

Surprisingly enough, and this is rare up here, you can buy a beer and walk around the fair, which is refreshing. Most outdoor fairs or whatnot have the beer garden. It is much more relaxing to just stroll around with a beer, but I suppose a less then responsible minority has made that a rarity.

Years ago we had a Governor who was anti-alcohol. He cut beer sales down to one area with a single line which was always a mile long. The Illinois State Fair is in mid August and it's always really hot. Now there are three food pavilions with beer sales at the fair. You have to have a beer and a brat at the fair.

Us Kansans are a rowdy bunch :) When I was a young boy attending the fair, there were zero beers served. Kansas is very conservative and we still have counties that are dry. A beer garden is more than you can hope for in these parts.
 
I cooked the steaks a bit longer last nite, the G/F does not like hers real red ....

Won't be doing that again, almost ruined it for me !



Brown it on both sides and serve, not as tough and way more flavor !
So the trick is to start hers about 3-4 minutes before yours, then toss yours on. flip hers a minute or so before yours, then you let them rest. You have one steak medium well (brown and juicy all the way through) and one rare / medium rare. Tweak you meet both your and her doneness preferences.
 
Tonight I did grab and go tacos and burritos from a local taco shop. When they told me the price, I asked for them to read my order back. I thought they had made an error. No sir, the prices had gone up since I was last there. After eating, I went online and checked their menu. It had not been updated and the prices that I expected were there to compare with my ticket. $0.89 tacos are now $1.39 and the $2.09 burritos have increased to $2.59. A fifty cent increase on an eighty nine cent item is nearly a 57% increase. That's what I call inflation. The food was pretty good tonight which it often is not so I'm not complaining. Just surprised.
 
Corn dogs and fries in the air fryer last nite.

I went to Krogers yesterday to get stuff for Mexican Food dinner, we are entertaining this Saturday.

Last week I noted the avocados were small and overripe already and they were .69 each ! !

As I was standing in front of the avocado display that still had the same 'cados and price, an attendant came over and put a new price on the display, from .69 to .89 .... just like that !


Wowza !

There is a HEB store across the highway from Kroger and I have already been in it last week and may have to try it out for awhile to compare.
 
My kroger store also had the small avocados for sixty nine cents. I bought some to make a small batch of guacamole. The ones I bought were ripe but they were the sorriest avocados I've ever purchased.
They had no flavor and though ripe towards the outside, they were hard as a rock near the seed.

Tonight I'm griddling burgers on the Blackstone and having some chips. I'll fry my onions and toast the buns.
 
I love Cajun beans and rice. A quick easy meal that I can eat at least three times a month. My go to brand of ready made was Knorr. Last year they dropped the Cajun Red Beans & Rice from their lineup.
I've tried all of the other available ready mix offerings and none come close to the ease of cooking and flavor. My daughter gifted me a couple of brands that Amazon had to offer that I haven't tried. I tried one and was not impressed. The second I tried tonight. It was Tony Chachere's Creole Red Beans & Rice. Though it was to be brought to a boil and then simmered for 30 minutes, Knorr was 7 minutes, it was actually pretty good. Not Knorr good but plenty good.

I always dice up half a sausage log and blacken it before adding the beans & rice mixture. I melt a bit of cheese into the dish before serving. I always add additional Cajun seasoning to my bowl. From now on it will be Slap Ya Mama Cajun seasoning
