What's for dinner ?

Fish sandwich

San Antonio Fish GIF by Bill Miller Bar-B-Q

I made a fish sandwich last night. I bought a bag of Gorton's frozen breaded fillets of pollock. They were small so it took two fillets for a hamburger bun. They were nothing to brag about but I was hungry for a fish burger.

McDonalds, of all places, once made a decent fish sandwich. I always ordered mine without their tarter sauce. If my memory servers me, it was somewhere in the mid 80's that they quit using cod and went to junk fish for their fillets. It was a sad day for me for the fish burger was the only thing they had that I cared for.

It was a sad day when Arby's stopped using real roast beef. There are still two fast food places that still use real roast beef. One is Roy Rogers, but I can't remember the other at the moment

I never was a huge fan of fast food but it was an attractive option when my wife and I worked two jobs with four kids at home. Some were better than others for food quality. In direct competition with other fast foods, their products decreased in quality as an attempt to compete in price. As a result, they all have a miserable product to offer nowadays. I'd pay more for a fast food meal if it was decent.

When we had the time, we'd grab dinner at a small local chain burger place that had maybe six stores in town. They served a great burger and fresh cut fries. Fast food there meant a ten minute wait or longer. Everything was made after you ordered it and it was at least 50 to 75% more expensive than other similar establishments. It was worth the drive, the wait, and the price for quality food. I think there is one store left.

Corned beef and cabbage is slow cooking in the crockpot.

The day after St Patrick's day I bought six corned beef briskets on the cheap. They were all points.
My thought was why not slow smoke them which I tried a number of different slow smokes with less than positive results. The last remaining brisket point is seeing the tried and true crockpot cook. It's time that it is cycled out of my freezer and has only been waiting for some cooler weather.

I love the hot summer weather but I'm ready to eat some cold weather meals. Soups, stews, chilis etc are sounding good to me.

so i bought some NY steaks and i was too lazy to go out and get coals to grill it.....so.....i pan seared my steaks and then i butter basted the steaks until it was medium rare. in the the butter i added a 1 tb of "its better than bouillon" beef in addition to 4-5 sprigs of thyme and 2 tb of chili crisp. i tilted the cast iron over the burner and basted the steaks. man talk about flavor and not to mention juicy. best steak i have made in a very long time.
