I have a pound of ground beef thawing. Hamburgers and fries or taco salad for dinner. I'll wait until the boss returns to know for sure. It might be tuna casserole.

My taco salad has turned into soft corn tacos. I have lost my taste for my favorite quick meal, burritos. I love seasoned ground beef, refried beans, cheese, and hot sauce rolled up in a flour tortilla. Everything about the dish tastes bad to me now. I'm trying to reinvent the wheel on the dish. Seasoned ground beef, black beans, cheese, salsa, in a corn tortilla. It can't be all bad... right?

Hmm, not so sure my mother is having her oil change though, last night was fish and broccili, tonight, well that is probably just whatever we have in the minds and hearts though, even though tacos does sound surperb right now though, thinking of something else...
My corn soft shell tacos weren't bad. I wouldn't call them good but I did eat them. The corn tortillas were only 15mg of sodium each vs 300+ for flour. I used black beans that contained zero sodium compared to refried pinto beans that are over 900mg per cup. It might not have been that good but it was certainly a lot more health for me. Will I make them again? NOPE
My night off so the Darling Bride is preparing a dinner of salad, chicken breasts stuffed with spinach & cream cheese, and macaroni and cheese on the side.

Pannene for dinner, its in the oven right now though... hmmm, what should I have with it, since I am home alone for the meantime.
I helped my son's girlfriend pick up her 10 month old cow in the Hartford area, about an hour away. Her mom got us italian grinders from a place the cuts premium cold cuts for each sandwich as they are ordered before we left. Between hooking up the trailer, driving out, loading up the cow, driving back, backing up to the paddock (is that what you call a cow enclosure?), unloading the cow, dropping the trailer and driving home, I just ate my now soggy sammich. It was still pretty tasty.

I made enough tuna and noodles to feed an army. So, I get to eat it again tonight.
While I was trashing the kitchen to make a cheesy beef & broccoli casserole for tonight, I decided to further trash it by browning the beef & sausage for my signature spaghetti sauce for tomorrow; and make this delightful cheesy sausage & hash browns casserole for a hearty heat & eat breakfast.
I tenderized some chicken breasts, baked some bacon, and had chicken bacon ranch sammiches.
This evening I will make homemade spaghetti (I use 50/50 semola flour and Italian 00 flour) served with my rich & meaty sauce and 3-cheese garlic toast.

I'm thawing the fully smoked brisket flat that I saved from my whole packer cook from a couple weeks back. Tonight we will have brisket and baked potato chunks. Tomorrow will either be beef fajitas or BBQ beef sandwiches.

Pasta shells. Yummy.
Stupid simple and wicked cheap (Masshole term) dinner. Shake and bake pork chops and rice pilaf. Anytime I can feed the family for under $10 is a win.
Tonight we are having taco salad. Salad with seasoned ground beef, red kidney beans, shredded cheese, nacho cheese doritos, and hot sauce.
A piece of fish with COLD cheese? And they want $20/hour? No wonder I don't go into that death trap...
A couple of 2" thick ribeyes, baked potatoes, and green beans.
I ate the last of my brisket flat tonight. Sliced thin and slow simmered in BBQ sauce for BBQ beef sandwiches served with potato salad.
I grilled out some boneless skinless chicken thighs and baked some broccoli florets.
