What's for dinner ?

I made steak and cheese sandwiches the other night and we have some leftover rolls, sooo.... .....it's sloppy joe's tonight. No manwich crap either. Homemade stuff.
All the fancy cooking aside, Sloppy Joe's are an underrated meal. How easy is it to sweat some onions and peppers, add minced garlic. Then stir in and brown ground beef with some chili powder, and finally add ketchup and mustard and let simmer until it reaches your desired thickness. It is just an awesome flavor profile, it is super cheap to make, and the whole family loves it.
 
It was a favorite when the kids were home. With both of us working it was a great quick cheap meal that everyone liked. I never used chili powder. I added a couple of table spoons of sugar and a cap full of apple cider vinegar onion garlic salt pepper mustard and ketchup. Taco burgers and open face pizza burgers were also on the quick and easy rotation that everyone liked. :)
 
Looks good but salty. :) I'm in love with Navy beans and ham. Out of all the beans we ate while growing up, Navy was not on the list. I had them for the first time while spending the weekend with a childhood friend. I've been hooked ever since. Served over a couple of slices of white bread with pepper the only seasoning beyond the salt in the ham and bread. And oddly enough, it is one of the only meals that still tastes the same as I remember. My wife hates beans, especially Navy so it's a rare treat for me. She ate hotdogs tonight which I can't have.
 
I'm making a meatloaf tonight. I'd like to smoke it but I might just bake it inside being as it's cold and windy. The loaf will be half pork and half beef and contain mushrooms, and diced bell pepper and onions. I'm using saltines for breading and the only seasoning will be pepper in my tomato based meatloaf.
 
I cooked my combo meat meatloaf inside. It was a good loaf that the wife and I both enjoyed. This was the first time I baked instead of smoked this particular loaf without the smoke. I missed the smoke.
It adds an extra layer of flavor that I really enjoy. I will try my best, no matter the weather, to cook the loaf on the smoker in the future.
