What's for dinner ?

The grilled chicken was great and the baked potato was good. As much as I love fresh greens, kale is not on my list. Mustard greens top my list but I'm a big fan of collard and turnip greens. I'm a big fan of swiss chards wilted in hot bacon drippings. I've never prepared or have eaten kale. Now I know there is a reason. It should be saved for the bunny rabbits.

This evening I'll be preparing spaghetti carbonara with garlic bread, an incredibly easy and delicious comfort food. "Carbonara" is derived from "carbon" and this dish was developed for the coal miners in northern Italy. It's hearty, nutritious and filling. While many recipes are drier (especially in the north), I use heavy cream for a more rich, moist dish. Mix in some crisped Prosciutto, eggs, Parmesan cheese and a little parsley for garnish, and served with white zinfandel or pinot grigio, it's almost as satisfying to look at as it is to eat.

I have a couple pounds of bacon in the oven. Homemade BLTs. Feed the family for under $10 and maybe have some leftover bacon so I can have a sandwich during snow cleanup tomorrow.
 
I have always made our chuck roast in the crockpot... since the Darling Bride has requested rotisserie chicken tomorrow night, however, I decided to break out the workhorse Showtime Rotisserie Platinum and put the chuck roast in it. It's been vacuum marinating all night, and the rotisserie should put a nice crisp sear on it very quickly. Hopefully it'll turn out as well as I hope...
 
I was cleaning snow all day, so American Chop Suey, or as the part of the country not New England calls it, goulash. I don't care what the name is, it is tasty and warms the soul after shoveling snow.
