What's for dinner ?

i just made some miso soup....but for me it is more like a stew. i made it with potato, onions, carrots, and cabbage. but the star was the salmon. OMG the salmon just melted in your mouth. it was soooooo good.

I had my navy beans again last night. Always best the second day. :) Tonight I decided I would try beef again. I fried a couple of cheeseburgers and baked some sweet potato fries. I wouldn't say that the burger tasted great but it didn't gag me while it was cooking and I was able to eat it. There is still hope in this world. :)

I'm doing fish tomorrow night. I haven't made up my mind just what yet. I have channel cat, cleaned shrimp, salmon, and cod fillets. I'm leaning towards the cod. I'll likely bake the fish unless it warms up enough to put a fry on the Blackstone.

No such luck on warmer weather today.. maybe next week. I baked cod inside. The wife likes her fish drowned in lemon butter, lemon pepper and a bit of garlic. I like mine dusted in cayenne pepper and smoked paprika and a bit of garlic. I baked a small potato and fixed a medley of broccoli, cauliflower, corn, and tomato.

Lightly breaded pork cutlet sandwich with chips and dip was dinner last night. It was better than it sounds. :)

Tonight I making stuffed bell peppers. The filling will be chili seasoned ground beef, onion, garlic, salt free diced tomatoes and tomato sauce. I'll stuff my pepper with the mix and brown rice. The wife will stuff hers with cauliflower rice.

I have over half of my pepper stuffing left over from last night. Unless I change my mind, I think I'll fix a pasta and add my leftovers to it for dinner tonight. Pasta contains less sodium and more protein than brown rice. Not nearly so carb friendly however.

isn't split pea a veggie?👍
Grabbed from the net: Split peas are a type of legume and can be eaten as a vegetable or protein.

Homemade Split Pea Soup, just like mom made growing up! This hearty, protein packed, comforting soup is made with tender split peas, flavorful ham and fresh vegetables. It’s easy to make and perfect for the cold weather.

Take a look at the nutrients. It's super healthy though a bit high in carbs.

I have a package of ground beef thawing for dinner. Unless I change my mind, I will fix smash burgers and fried onions on the Blackstone tonight. I'll either cook some fries or do chips with the burgers.

I fixed smash burgers on the griddle tonight. I had some chips with quacamole for a side. The ground beef contained 112mg sodium. The avocado only 11mg. The high sodium level was in the bun, mayo, cheese, 4 dill pickle slices, two tablespoons of hot salsa, and 22 Tostito rounds. Sodium level for one meal = 1226mg. I'm to stay under 1500mg to give you some clue as to the low sodium battle.
