What's for dinner ?

Today is my 33rd Anniversary with the Darling Bride... while there isn't a "traditional" gift theme for this year, many cultures associate the 33rd year with the gemstone amethyst.

So this is a lavender, purplish day, from her lavender bouquet to dinner: eggplant parmesan and chewy blueberry cookies for dessert. I also have food grade, edible glitter for our champagne flutes, so each glass will swirl majestically with glittering lavender.

Doing the vegetable dinner tonight. Wife bought 12 of these vegetable trays because they were on sale. They are pretty good, only 70 calories, plus they are taking up too much room in the freezer.

I'm revisiting the pasta dish I fixed last night. Using no sodium added diced tomatoes and tomato sauce kept the dish within my diet and it tasted great. As simple as the dish was, I'll dice some bell pepper in it next time and might do brown rice instead of pasta. Changing one's diet is interesting and challenging.

I am very old school and have no trust in man made substitutes. I can limit my salt intake... it's an adventure. I've never been a big salt guy anyway. The only food that I put salt on is boiled eggs. I do appreciate the thought and I thank you for that!

I hope that I not coming off like a crying Brian about my sodium diet. I'm sure that lots of people are in the same boat and when you stop and do some research, everything except nuts and fruit contain some sodium. Packaged foods, fast foods, and restaurant foods are all over the top in salt. All canned foods are over the top as well. Cured meats are lousy with sodium. I honestly never considered how unhealthy our foods are. I don't know if it just the US market or if it's a world problem. The only way to eat healthier is to buy fresh and cook scratch meals. It's definitely not the norm for our fast pace society.

↑↑ That will be legit no matter how you cook it! ↑↑

I fixed combo burritos tonight. The tortilla, refried beans, shredded cheddar, and hot sauce are all high in sodium... bummer. But, they tasted pretty fetching good. :)

After shopping, I found a half friendly low sodium bread today. I was looking for a bread or a wrap that I might use for a turkey sandwich. It has 200mgs per 2 slices which is a lot less than my old go to bread.
Way too much but I'm having a turkey sandwich all the same. :)
