We have one daughter that flew in from California to travel with us Broken Bow for the eclipse. When we got back into town tonight, she insisted on taking the family out to eat at her favorite Mexican restaurant.
 
The Darling Bride had a hankering for pinto beans with ham. Now that our former tax deduction son has moved into his own apartment, we can enjoy meals with beans again (everyone in the family was raised on beans but, for some unknown reason, he's deathly allergic to them). She cooked them last night, let them set in the fridge and we're enjoying them today.
 
We replicated a dish that my wife had recently at a Mexican restaurant for dinner tonight. Diced grilled chicken breasts with diced avocado, sour cream. and hot chunky salsa. I now understand why she wanted the dish again. The flavors fit together well.
 
Now I'm jealous.....lol
It has taken me a few months to regain a desire for beef. I've steered away from expensive beef because it all tasted bad to me. I'm slowly gaining my love for steak back. I pampered these ribeyes from marinade to serving with a slow smoke, a rest, and a quick reverse sear. My time was not wasted. They were pretty steaks and were just as tasty as they looked. Sometimes the magic just happens.
 
It is supposed to be a bit warmer today but I'm still chilled from working outside in the forties yesterday.
I'm hungry for a warm dish. Unless I change my mind, I'll be having a big pot of Navy beans and ham for dinner.
 
Tonight's dinner would give my B-I-L chills. He always made fun of my cooking one of my favorite meals saying I was cooking catfish bait. :) I'm frying breaded chicken livers tonight. I plan to fix mashed potatoes and gravy and green beans to go with my bait. :)
 
Cuban sandwich and side salad from McAlister's Deli. The Cuban sandwich was very good for a sandwich with a lot of pulled pork and ham on a toasted baguette., but it wasn't like the Cuban sandwiches you get in Miami or the Cuban restaurants in Chicago. The side salad was excellent

It's a soggy boggy day. Temps in the low sixties and overcast with a constant mist has made for a miserable day. Fortunately I mowed my lawns before the bog set in. The weather has made me hungry for a hot dish. I decided to make a goulash. Ground beef, onion, bell pepper, tomato sauce, and some Italian seasonings mixed with macaroni and maybe a bit of cheese. It's a favorite childhood warm meal for a cold dreary day.
 
I had some sever stomach flu attack so I ate nothing. After going over 70 years of life without catching anything, I now have the opportunity to experience everything that is going around. I didn't really feel cheated without catching the fungus among us. :)
