What's for dinner ?

We are eating at the cabin and everyone is bringing something. I'm bringing a turkey breast, dressing, and gravy. Another is bringing a spiral ham and baked sweet potatoes. Everything else will be a surprise. The party will last from noon today until noon tomorrow so there will be lots of chips and dips and perhaps an adult beverage or two consumed.
Man, you know how to throw a swingers party.
 
We had every intention of enjoying blackeyed peas, collard greens and yum-yum cornbread today... the Darling Bride, however, has been hurting and exhausted all day and I told her we'd celebrate tomorrow. We just snuggled in bed instead of cooking: I think it was a very wise decision.
 
So last night I was debating between throwing something together on the truck or getting Chester chicken from the truck stop, however I had farmers boys a couple hours earlier so I wasn't really hungry.
I took a nap and woke up around 9:55 pm last night and decided to go grab Chester's $5 snack deal well that was the plan, instead I woke up around 0130 this morning, looked around for the chicken and realized I never got it.
So i chopped up some yellow, green bell peppers and tomatoes plus I have onions so I am deciding if I want to do pho noodles, I have some beef i can microwave and add to the noodles along with my pepper and tomatoes, I can also do rice, beef veggie dish along with the pepper and tomatoes, I also can orange chicken with rice or noodles or i can do Mexican. Throw some burritos in my hot lunch box oven cover them with enchilada sauce cook em for an hour add some cheese and them serve them with the pepper and tomatoes

So I decided to go with pho noodles. I added some beef, onion and my peppers and tomatoes mixture. I am cooking burritos in enchilada sauce for dinner tomorrow night

I have absolutely no idea what I'll eat today.
Been a little under the weather for most of a week now so I have no clue.
I do know that tomorrow we'll be celebrating our family Christmas gettogather, finally, after it was postponed from last week.
My wife's homemade spaghetti,
Salad and rolls.
It's a menu that all of us like, even all of the grandkids.
 
Darling Bride was SO STOKED to finally visit a local fish house she'd wanted to try for years! I don't eat fish, but they offer other things so off we went. Got there, only to find taped to the doors: "CLOSED UNTIL JAN 9th". She was devastated... moreso that it wasn't even mentioned online. We went to Hwy 55 and she had a Philly Cheesesteak instead. I had a burger and we split a basket of onion rings.

Tomorrow we'll finally enjoy our oft-delayed Mexican Fiesta night with tacos & refries; then my hearty chili on Monday. By Tuesday and Wednesday when it's really cold, we'll be heating up each other in our self-imposed Dutch oven for two...
 
We are eating leftover smoked spareribs and whatever else comes to mind. The town is pretty much shut down because of the weather so there is no grabbing something or ordering a pizza... which sounds really good. :)
 
I was into the simple mindset as well. I bought some wafered sliced ham and turkey for sandwiches tonight. I also got some pepper jack cheese to make it interesting. The sandwiches cried out for some chips and dip so I put together some finely diced jalapenos and mild cheddar with a bit of garlic to make some tostito corn chips fun.
