I diced up the rest of my spatchcock chicken from the weekend, mixed in the leftover steamed carrots in butter and hot honey, plus some frozen peas and carrots to fill it out, gravy, and am having chicken pie.
Three full meals out of a $5 chicken. My frugal bone is happy.
The Boss Lady had a tooth pulled this morning and can't eat any "solid" food for, at least, today. I'm thinking that a simple balogna sandwich sounds good to me tonight.
