What's for dinner ?

I diced up the rest of my spatchcock chicken from the weekend, mixed in the leftover steamed carrots in butter and hot honey, plus some frozen peas and carrots to fill it out, gravy, and am having chicken pie.

Three full meals out of a $5 chicken. My frugal bone is happy. :p

We had veggie soup with pork in to it, a lot of different spices and covered in cheese with the grater.
I forgot to post yesterday, been a hellstorm day, had pork sandwich with a few carrot sticks.

My wife is still not feeling well. With that in mind, I'm thawing out a half pound of breakfast sausage with plans on fixing a one man breakfast burrito show tonight. It's a meal that she wouldn't want if she was feeling well.

My sister-in-laws birthday was on Tuesday and we took her and my brother-in-law out to lunch at one of our favorite seafood restaurants.
I had fried catfish while everyone else had a talipia and shrimp platter.

I have some tips that are a little tough, so I'm going to braise them in a Dutch oven over a bed of onions, carrots, and celery, make the drippings into a gravy, and serve it over rice. Beef is too expensive to waste nowadays.

So last night I made sloppy Joe's. I haven't had them in three or four decades :D :thumbsupdroid:

Sloppy Joes were a regular in the dinner menu rotation when I was growing up and when I raised my children. I've never tried Manwich and have always made it from scratch. Ground beef and diced onion ketchup, mustard, bbq sauce, sugar, and vinegar. Good eating.

I plan to fix cheeseburgers and fries tonight.

Sloppy joes are an underrated meal.

I've had manwich, but I'm with you, go from scratch. That said, Joe probably has limited capacity in the truck.
