What's the best way to do a clean wipe and restore?

I've had my Droid X since release. I just did the latest OTA update from Verizon. The phone seems to be running slower than it did brand new. I'd like to reset it back to factory specs then restore my apps. What's the best way to accomplish this?
 
if you're currently on Gingerbread there are only two choices you have...

1. Flash the Gingerbread SBF file coupled with a factory reset to get on a completely fresh Gingerbread install (which your phone did NOT have when you updated)

2. Flash the Froyo SBF file coupled with a factory reset
