Who uses SSH for unsecured wifi?

Most of the time I don't need to use unsecured wifi connections because I'm either at home or at work (no, I don't get out much), but work's had me traveling more this spring and I've been stuck using open hotel and airport wifi more and more. This has me increasingly worried about firing up my laptop or phone to work online.

Most sites I've been to suggest a SSH tunnel to connect to a proxy when using unsecured wifi, but none of the guides I've read seem to take me (high ignorance level) all the way from point A to point B. I think I could manage to choose and install a software client on my laptop/phone. Choosing and setting up a proxy is where I run into trouble. I don't want to just connect to my home internet connection (speed issues). A free, trustworthy proxy would be perfect, but I've yet to find one I'm comfortable with. Using Amazon's EC2 service to run a mini-instance sounds like an affordable and fast option, but I've not found a guide specifically for this and I'm not quite savvy enough to cobble what I want to do together on my own.

So how do you handle this problem? Any suggestions?
 
I'd considered a VPN, but a lot of stuff I'd read seemed to consider a VPN "overkill" for this sort of thing. Of course, considering I have free access to my university VPN and don't have to reinvent the wheel, I think I'll do some more reading and probably just go with it. Thanks for the link.
 
I tether via my Android phone if needed, which works very well.

However, most of time you should be okay on open wifi, provided you are careful. Gmail uses SSL, most email servers will use SSL all the time (except for Yahoo, which I despise).
