Be careful of what you delete as far as bloatware goes. i would use titanium backup and just freeze them. there is a list of apps that are safe to freeze and ones that are not.
a nandroid is a complete snapshot of your current rom. so by going back to a previous nandroid will return you back to whatever state that rom was in. so if your nandroid is from a stock rom then yes it will be back to stock.

Yep. The NANDroid is an image of your phone's internal memory. Restoring the backup puts your phone in the same state as when you made the backup.
