But wait... Say we compile that and push it to our phone, wouldn't it have to go though encryption checks? Meaning that the source generates the LG private key and/or its hidden in the source..........

the actual encryption key is not hidden within the kernel source, or the rom source. rather, it is a part of the bootloader checking the others. And and vice versa. You have to change both.
