I've tried looking around - couldn't find a 'direct/useful/comprehensive-related post to this question (w/ a short secondary question).

I've used gingerbreak 2.2.1 (thanks to developers for your hard work
you have been very helpful to me, and I'm sure to so many others, too) - and one thing to another, root explorer, etc - I've deleted lots of nasty bloatware. Here's the small(est) thing. Youtube gone, deleted after r/w mount and even a restart or two [how satisfying is it to see boingo go?], I still see Youtube in my apps list.
Also, I tried looking around to see if 'clearing a cache' was the issue. Doesn't appear to be. Any ideas what is going on here?

Second minor point. What is the process for moving downloaded apps into the main app list? Can I do this using root explorer? Someone mentioned buying the full version, and I don't know what the lite version looks like, but this is, to anyone reading this who doesn't know, a great program. Buy it, and thank the developer, if you want.
