Okay guys, finally took the time it test all the flashable zips to see what the cause of the bluetooth problem is.
Data was always formatted before flashing each rom. I'm listing it as I did it in order:
Formatted data.
Flashed Gingersteem 1.0 - Bluetooth works perfectly, but kernel is unstable @ 1.5Ghz (at least on my phone)
Flashed the theme - Bluetooth pairing crashes happened as a result.
Formatted Data.
Flashed Gingersteem Extreme - Bluetooth has the pairing problem causing it to crash.
Formatted data.
Flashed Gingersteem 1.0 - Bluetooth worked again
Flashed Plague Kernel 2.2Ghz with hdmi fix - Bluetooth still works and phone no longer reboots because the kernel is running stable. Success.
So It's now verified that both the theme and the extreme rom contain something that causes this problem, as I started from scratch each time. Took a long time, but man I was tired of that happening, I have like 5 bluetooth devices I use constantly, my pc, laptop, car's OBDII adapter, car's bluetooth FM receiver, and other phones.
I noticed the extreme rom is slightly bigger, so it's gotta be some file or app in there, that just also happens to be in the rom. As for the people that say bluetooth is working, they probably thought "Enabled" was working, and didn't try to actually pair a device.
