I love langoustinoas - just saying - boo yeah, good stuff?

And if going for venison with curry, I would suggest a red curry over yellow or green. Serve with pineapples and minced cranberries, for color as well as balance. Follow with cold cucumber soup for a closing, tell Americans it's dessert.
 
What you have right now is 2 beef dishes, 2 pork dishes, 3 seafood dishes and 1 poultry. If you are looking for balance then I would take out one of the seafood dishes. You could also mix it up and take out one pork dish and one seafood dish to add venison and lamb.

yeah i was trying to go with a more of a seafood/steakhouse type restaurant with a tropical theme. i guess i should have set this up better. still playing with those ideas though. i am suppose to only come up with 8 dishes.

ok so then lets keep it simple

1. Steak Dish
2. Chicken Dish (something kids will eat unless they are banned.)
3. Venison curry sounds good - could be a signature dish
(seafood)
1. shrimp dish
2. Fish dish (stuffed flounder sounds yummy)
3. shell fish , clams, oysters, scallops - maybe crustaceans like Crab
4. a platter dish some of or all of the seafood above
5 surf and turf steak and shrimp , Alfredo dish seafood w chicken / venison

anyway just how most do it here in Georgia. and now i'm stuck between stuffed flounder and alfredo :D

Would you also not need a vegetarian dish to round out the menu? While I have been an omnivore my entire life, my son dated a vegan for a while and it made restaurant selection more limited.

I agree.. not enough true vegetarian menus out there.

I do vegetarian three days per week. If we happen to be out on one of my veggie days, I have to do what a friend was doing and suggested to me: order a small salad and then various non-animal sides for the "main dish." Baked tater, hot green beans, rice, etc.

That and a Guinness (for more protein, of course :D).

Well, I'm a chef and CIA grad, but also 99% veggie (I'll taste stuff at work for seasoning, but don't eat any meat outside of the restaurant).
Wife and I have had the pleasure of eating at some of DC's best restaurants and all have been able to accomidate me (though I'll snatch some of the wife's stuff to taste). Komi was the latest and Restaurant Eve and minibar were fantastic. We're going up to Volt later in the spring. They can be hard main courses to put together, but so rewarding (and often challenging which all chefs love :)).
 
yeah i can't please everyone lol. but a pure vegetarian dish is not my cup of tea, and this is not a full menu. if i was to do this as an actual restaurant menu then of course i will have salads and some vegatarian dishes. the project only calls for 8 dishes with no specifics as to what they are.

Just a bit of humor. My daughter and I just returned from a small restaurant that has a vegan section to their menu. My personal favorite vegan choice? The macaroni & cheese. :eek::D

If it was just a vegetarian menu it wouldn't be that big of a deal, but vegans don't eat anything from animals. Unless they figured out a new way to make cheese that I don't know about then no true vegan would eat it.

Some of those dishes sound a bit strange to me. Where's the Beijing roast duck, or the boiled sliced donkey with aubergines, or camel fritters, or spicy scorpion kebab, or Guangdong style stewed frog, or Hubei style chilli fried pig brain?
