ok one more question. For some reason i unroot and then do OTA 2.3 will it brick or something. I dont mind not being rooted for a bit.
Basically, you have three choices:
1) Update manually. This is the preferred method, and honestly, the best. You'll lose the ability to restore old nandroid backups if your hboot version changes, and it generally does with OTA updates. Basically, you just update to a ROM based on the latest software version, and update to the latest radios, etc. If you need to every downgrade, it's pretty easy to do.
2) Fully unroot, then accept the OTA. Nobody is saying this will brick your phone. The problem is that you're almost guaranteed to be without root for a while. It will be that way until somebody discovers a new root method. It usually takes unrevoked several weeks to get an update out there that will root the latest version. I'll say it again. If you do this, expect to be without root for a little while. It's very unlikely, but you could potentially lose root forever. It *could* happen.
3) Flash the stock recovery image only, while leaving S-OFF. This can put your phone in a weird state, and is not recommended. Yes, it's what the unrevoked team tells you to do, but you'll basically have:
a) S-OFF with an hboot that is incompatible with unrevoked
b) An unrooted ROM
c) A stock recovery
Any attempt to restore anything with unrevoked will be unsuccessful until they update their app. If absolutely anything goes wrong, at best, you could be without root. At worst, you could make your phone unbootable, and have a hell of a time trying to fix it. Yes, some people get away with it, but I highly recommend you not attempt it. The reason it "works" is because unrevoked sets S-OFF lower than hboot. Trust me, it can put your phone in a weird state.
