Hey there tgg... there are some threads with this topic that was most helpful when I got my X. I would do a search.... You will find em.
 
I'll bite:
-Launcher Pro
-Google Sky
-Angry Birds
-Barcode scanner(not that you NEED it, but it's pretty cool to show off with it ;) )
-Quick Settings
-Wi-Fi analyzer
After that it's pretty much personal preference stuff.
