What's for dinner ?

I'm fixing stuffed bell peppers with ground beef, onion, diced jalapenos, chili seasoning, rice, and cheese.
This is absolutely my favorite meal. My mom would make these for me every year on my birthday, unfortunately she pasted over 10 years ago and my wife had never really ever been able to replicate my mom's. We just grab these premade ones at Costco.
 
It's a meal that my wife brought with her from her home. It's certainly nothing I had from my home. Strictly breaded fried meat and potatoes at my house. It's one of those meals that you instantly fall in love with and there comes a time it's a must have dinner!

I did burgers on the Blackstone yesterday and baked some frozen onion rings. The burgers were great and the onion rings were just terrible. Tonight we had smoked baby back ribs for dinner. The wife had some mixed vegetables and I had some baked beans and some cottage cheese.
 
Sloppy joes sound good. I'm baking some breaded chicken planks and will serve them up on buns with mayo, swiss cheese, lettuce, and dill chips for my wife.
 
I thawed out a vac sealed bag of pulled pork yesterday for sandwiches. I made some potato salad to go with the sandwiches. Tonight I cooked some of the pulled pork and some pinto beans with some chili seasoning and hot sauce. I rolled the mixture in tortillas and added some shredded cheddar. I love pulled pork burritos!
 
Well, the boss lady surprised me by coming home Tuesday afternoon. Her father's doctor said that he can resume most of his daily activities and he told her to go back home.
Don't rightly know what we'll have for dinner but I won't be dining alone.

My wife is on low carb low cal diet that resembles a regiment of eating cardboard. I'm on the other end of the spectrum. I need to watch my sodium and potassium intake. I'm a huge protein guy and love my carbs. I do most of the cooking and it's near impossible to make something we both can or will eat. Not that big of a deal until you try to cook for one person. It's near impossible to cook a meal for one person without a great deal of waste and additional expense. I bet you have had a struggle while your wife was away.
 
I cooked breakfast for dinner on the Blackstone tonight. The wife made a bacon, egg, and cheese sandwich on butter grilled bread for her dinner. I had bacon and eggs and fixed some grits. We were both happy.
 
i just saw a youtube video on scallops. haven't had those in such a long time. thinking of seared scallops with polenta and swiss chard and spinach for dinner tomorrow. if you have not had scallops, you are missing out. gonna swing by Wholefoods tomorrow to hopefully pick some up.
 
Swiss chard... an item not found in the local markets here. I use to grow them in my garden. They do well here and they are so good. I always wilted mine in bacon grease and a bit of sugar if they seem bitter.
