What's for dinner ?

Seriously, no one has had dinner in 2 weeks?! :eek:
Tonight we're having a pasta pancake (it's something I've made years ago, pretty basic) with sauteed chicken, mushrooms, onions and a red sauce. Salad with blue cheese dressing. :)
 
I made homemade shrimp & bacon jambalaya

Tonight is a simple pasta with tomato sauce, mushrooms, onions, goat cheese, parm. Roasted brussel sprouts, simple salad.
Suppose simple but I've been working on it for a while now. :)
 
Spinach tortellini from Trader Joes with a mushroom and tomato cream sauce. Roasted broccoli and cauliflower. Pretty basic as it's MY Friday. :)
Should be dining out the next couple nights with a friend coming to town.
 
Tonight's nice menu. :)
-Savory bread pudding with soppresata, chard, goat cheese, parm.
-Oven fried mushrooms
-Cold salad of roasted corn, fava beans, cherry tomatoes, chives, lime/olive oil

Dessert is an ice-cream I made from cookie butter (from Trader Joes) and crushed speculoos cookies.
Wine is a Sauvignon Blanc

(okay, I had all day to make this stuff since I was off)
 
Come on folks, what are ya'll eating! I need inspiration! :)

Tonights a humble dinner of ravioli care of Trader Joes with a tomato sauce and mushrooms, onions and cherry tomatoes. Salad of arugula, avocado, goat cheese and a simple lime vinaigrette.
 
So I took some leftover pork tenderloin roast, sliced it thin, tossed some ham and swiss on it on a nice Italian bread slice roughly 3/4" thick. Added some spiced mustard and put it in the panini press for a makeshift cubano. Leftovers used and a bunch of happy tummys. It was perfect as there was about 3 minutes of prep, 10 minutes of cooking, and ten minutes of cleaning. On top of that, all the ingredients were fresh and healthy.:thumb:
